So, my better half didn't have much exposure to classical music growing up. Surprise, surprise, South Dakota doesn't put too much emphasis on the arts, especially in a rural school.
One of the highlights of her public education was music class -- where she got a limited introduction to the big composers. She really enjoyed it, and recently she's been wanting to expand her symphonic horizons.
I'm putting together a big music playlist for her on youtube. I'm hitting most of the big pieces and my personal favorites, but if any of you have recommendations, please share! There's so much to choose from, so I'm sure I'll miss a few good pieces simply because of all that's available.

I could recommend a lot but like you said I have trouble choosing when there's so much to enjoy. So I'll just list what I've been playing myself for fun. Definitely do Schubert lieder, especially Die Schöne Müllerin and Winterreise, but lots of standalone songs are amazing as well. I just played the Satie Gnossiennes #1–3 for a recital; they're pretty amazing. I had been working on the Ravel Tombeau de Couperin suite for a while too...I should go back to it.

Go on Spotify or YouTube, look up Olafur Arnalds. Anything he's done is amazing. He's recently completed a new album called Island Songs that is a collection of seven songs recorded in different parts of Iceland. I'm going to go a slightly different route. My knowledge of symphonic music is limited to the big ones, but there's a different sort of classical music which I'm enamored with - classical guitar. Specifically, the work of Andres Segovia, whose contributions were so great that he wasn't just knighted, he was made a part of the Spanish nobility at the rank of Marquis.
